Sangria【西班牙傳統飲品】

在仲夏夜與三五知己淺酌兩杯,談天說地,實在是人生一大樂事。當年熊貓先生得知肥丁喜歡淺酌,不勝酒量的他也附和附和,替肥丁挑選佳釀,肥丁就是這樣認識了 Sangria

Sangria西班牙傳統飲品,在香港不算流行,但在澳門幾乎每家餐廳都供應,甚至懶得寫在餐牌上,客人直接點便可。傳統以紅酒、白蘭地、梳打、糖漿混合,加入水果和冰塊,血紅如寶石的色澤,非常誘人,水果香甜,容易入口,不會喝酒的女生也能接受。肥丁不喜太甜,用糖漿和梳打水控制甜度。

材料

  • 紅酒 Red Wine 750 ml  ( 1 瓶 )
  • 鮮榨橙汁 Orange 240 ml ( 約兩個 )
  • 檸檬汁 Lemon Juice  45 ml  ( 1 個,不喜太酸可減半 )
  • 糖漿 Syrup 120 g  ( 60 g 砂糖 + 60 g 清水,煮融 )
  • 君度橙酒 Cointreau 60 ml  ( 如買到 Triple sec 是最好的選擇 )
  • 梳打水 Soda Water 300 ml  ( 可用雪碧、七喜代替,無需調製糖漿 )
  • 冰塊 Ice Cube 適量

水果 

  • 橙 Orange   1 個
  • 蘋果 Apple  1 個
  • 檸檬 Lemon 1 個
  • 青檸  Lime 1 個
  • 桃駁李 Apricot 2 個
  • 紅布冧 Plums 2 個
  • 草莓 (士多啤梨) Strawberry 10 顆
  • 櫻桃 (車厘子)  20 顆

★★★ 水果的組合很隨意,橙、蘋果和檸檬為基礎,再配搭其他口味,各種 berry  ( raspberry, blueberry ),蜜瓜,蜜桃,奇異果,菠蘿,芒果均可加入

做法

1. 將紅酒、梳打水預先放入雪櫃冷藏

2. 製作糖漿,砂糖、清水放入小鍋中,細火加熱至砂糖完全融解,放涼備用

3.  鮮橙榨汁,檸檬榨汁,兩種果汁混合備用

4.  水果洗淨。橙連皮切片或切粒,檸檬連皮切片,青檸連皮切片,桃駁李、紅布冧切片 ( 不放心可去皮切片 ),士多啤梨去蒂切片,車厘子去核,全部放入大玻璃瓶中,加入橙酒,拌勻後放入

5. 混入鮮橙檸檬汁,加入糖漿,最後加入紅酒 ( 紅酒可先加半瓶,試甜度 ) ,放入雪櫃冷藏數小時,享用時才隨喜好加入梳打水及冰塊

小叮嚀

  • 調配 Sangria ,購買廉價或飲用剩下的紅酒即可,無需使用上等高級紅酒。調好的 Sangria 可放入雪櫃冷藏一天,風味不減

有關橙酒 Orange Liqueur

  • Triple sec 在三種橙酒中柑橘氣味最濃郁,是調配 Sangria 的上上之選,可是要在酒窖才買得到,而且價錢不非
  • Cointreau 「君度橙酒」則比較實惠,一般烘焙店也能找到,以酒辦形式出售,是很多橙味的甜品常用甜酒
  • Grand Marnier 「干邑橙酒」或「白蘭地橙酒」,製作的過程中加入干邑白蘭地,所以帶較強的白蘭地氣味,是這裏介紹的三種橙酒中最甜的一種

On a midsummer night, sharing a couple of drinks with a few close friends, chatting about everything under the sun, is truly one of life’s greatest pleasures. Back in the day, when Mr. Panda learned that Fat Ding enjoyed light drinking, he, not being able to hold his liquor, went along with it and selected some fine wine for Fat Ding. This was how Fat Ding came to know Sangria.

Sangria is a traditional Spanish drink that is not very popular in Hong Kong, but is served in almost every restaurant in Macau, often not even mentioned on the menu, and customers can simply ask for it. Traditionally, it is a mixture of red wine, brandy, soda, syrup, and it is garnished with fruits and ice, resulting in a blood-red hue that is very enticing. The fruity aroma is sweet and easy to drink, making it acceptable even for girls who do not usually drink alcohol. Fat Ding does not prefer it too sweet, so he controls the sweetness with syrup and soda water.

材料:

  • Red Wine 750 ml  ( 1 瓶 )
  • Freshly Squeezed Orange Juice 240 ml (about two)
  • Lemon juice 45 ml (1 piece, reduce by half if you prefer it less sour)
  • Syrup 120 g (60 g sugar + 60 g water, boiled until dissolved)
  • Cointreau 60 ml (If you can get Triple Sec, that is the best choice)
  • Soda Water 300 ml ( can be replaced with Sprite or 7-Up, no syrup preparation needed )
  • Ice Cube to taste

Fruits

  • Orange  1 pc
  • Apple 1 pc
  • Lemon 1 pc
  • Lime 1 pc
  • Apricot 2 pcs
  • Plums 2 pcs
  • Strawberry 10 pcs
  • Cherry 20 pcs

The combination of fruits is quite casual, with orange, apple, and lemon as the base, and then paired with other flavors; various berries (raspberry, blueberry), melon, peach, kiwi, pineapple, and mango can all be added.

Instructions

❶ Chill the red wine and soda water in the refrigerator in advance.

❷ Make the syrup by placing granulated sugar and water in a small pot, heating over low heat until the sugar completely dissolves, then letting it cool for later use.

❸ Juice the fresh oranges and lemons, and mix the two kinds of juice together for later use.

❹ Wash the fruits. Slice or dice the oranges with the skin on, slice the lemons with the skin on, slice the limes with the skin on, slice the peaches and plums (peel if preferred), slice the strawberries after stemming, pit the cherries, and place all the fruits in a large glass jar. Add the orange liqueur and mix well.

❺ Stir in the fresh orange and lemon juice, add the syrup, and finally add the red wine (you can start with half a bottle and adjust to your taste). Refrigerate for several hours, and when ready to serve, add soda water and ice cubes to your liking.

Tips

  • To make Sangria, you can buy cheap or leftover red wine; there’s no need to use high-quality wine. The prepared Sangria can be stored in the refrigerator for a day without losing its flavor.

About Orange Liqueur

  • Triple sec has the most intense citrus aroma among the three types of orange liqueurs, making it the best choice for mixing Sangria.
  • Cointreau is relatively affordable, commonly found in bakeries, and sold in a liquor store format. It is a popular sweet liqueur used in many orange-flavored desserts.
  • Grand Marnier, a type of orange liqueur that uses cognac, has a strong brandy aroma due to the addition of cognac during its production process. It is the sweetest among the three types of orange liqueurs introduced here.
