元寶麵包金光燦爛✨✨✨🍞,饱滿圓潤,送禮體面又有誠意,新年就靠它討個好彩頭。但是總怕麵包隔天就硬?天然酵母又怕酸味重?長輩喜歡有餡料的炒餡手酸?這次我用一台「安靜到連貓咪都睡著」的廚師機,做出5天還鬆軟、無酸味、好消化,從蒸南瓜、炒湯種,到揉麵、發酵,全程不沾手,連餡料都幫我搞定~省力+體面+好意頭,一次到位!

肥丁手工坊元寶麵包 (份量:200 g 元寶吐司模 8 個)

Bread (Serving: 200 g for 8 pieces in a Yuanbao toast mold)

 ◤南瓜湯種 Pumpkin Tangzhong

  • 高筋麵粉 Bread Flour 44 g
  • 熟南瓜泥 Cooked pumpkin puree 152 g  
  • 清水 Water 64 g
  • 葡萄酵液沉澱物 Grape Yeast Sediment 3 g 

 ◤主麵糰 Dough

  • 高筋麵粉 Bread Flour 760  g
  • Demerara 原蔗糖 Raw Cane Sugar 100 g
  • 全蛋液 Eggs 120 g
  • 淡奶油 Whipping Cream 120 g
  • 葡萄酵液 Grape Yeast Liquid 106 g

後下

  • 無鹽奶油 Unsalted Butter 56 g
  • 海鹽 Salt 12 g

餡料

  • 蜜漬紅豆 Candied red beans 每個 Each 60 g
  • 紅豆椰棗泥  Red bean and date paste 每個 Each 55 g
  • 自製肉鬆 Homemade meat floss 每個 Each 15 g

紅豆椰棗餡 Red bean and date paste

  • 去殼紅豆泥 Shelled Azuki Bean Puree 240 g
  • 去皮椰棗泥 Peeled date paste 345 g
  • 麥芽糖 Maltose 18 g
  • 山茶籽油 Camellia Oil 15 ml
