萬聖節 ~ 一個充滿神秘色彩的節日,怎能少了 Jack-O-Lantern ﹗做南瓜雕刻不容易,而且玩過後又不能吃。肥丁剛買了很多橙,靈機一觸,不如做鮮榨橙汁果凍,榨汁剩下的橙還可以雕刻用作容器,既有氣氛,又不浪費﹗
份量:橙杯 4 個
材料
- 橙 3 個 (亦可改為橙 2 個,西柚 1 個,改為西柚亦可,西柚皮較軟,不易做雕刻)
- 白砂糖 10 g ( + 45 ml 清水)
- 魚膠粉 4 g ( + 15 ml 熱水)
- 檸檬汁 1 小匙 ( 不喜酸或已用西柚可以省略)
做法

1. 全部橙橫切半,從白囊內側入刀,沿果皮劃 1 圈,用湯匙挖出果肉備用,切掉倒部一層薄薄的皮,使橙杯能穩固地放攞放,做四個橙杯
★★★ 由於橙杯要用來當作容器,挖出果肉時,記住保留果皮邊緣的果肉,切掉底部的時候,也不要切太多,以免破懷橙杯讓果凍液流出

2. 將其中約 1/2 個橙肉切丁,分四份放入橙杯中。其餘的橙肉放在過篩中用湯匙榨汁備用
3. 剩下的一個橙 (或西柚) 榨汁,過篩篩走橙核,混合步驟 2 的橙汁及檸檬汁,得到約 200 ml 的果汁
4. 魚膠粉盛於小碗中,先用15 ml (1 大匙) 室溫水溶解,再加入 30 ml 熱水 ( 2 大匙),攪拌直至完全溶解沒有微粒
5. 以 15 ml 熱水溶解砂糖,加入橙汁中略為攪拌,再加入魚膠水拌勻
6. 倒入橙杯中,放入冰箱冷藏凝固 (普通餸菜的冷藏庫,不是冷凍庫)
7. 待果凍凝固後,用刀雕出三角形的面相圖案,冷藏的橙杯會更硬,果凍不會流出,但雕刻的時候要注意安全

Keep the skin of an orange to make a Jack-O-Lantern. Make the Jello and instead of using regular cups or tiny bowls.
Ingredients ( Serve 4 )
- 3 Orange (would probably be better if the oranges had thick skin)
- 10 g Caster Sugar + 45 ml Water
- 4 g Gelatine Powder + 15 ml Water
- 1 tsp Lemon Juice
Preparation

1. For the first orange, cut oranges into halves, scoop oranges flesh out with a knife to make cups. For the second orange, cut in half and squeeze the orange juice with a spoon or orange juice presses. Then you separate the orange flesh inside out, bark is retained

2. Dice 1/2 orange flesh and divide to 4 parts. Place into the orange boat. Squeeze organge juice with the remaining orange. Add lemon juice and stir well.
3. Use 4 g gelatine powder to 1 tbsp water, soak the gelatine powder until soft. Add 2 tbsp hot water until the powder is dissolved with lumps.
4. Dissolve sugar in 15 ml hot water. Add orange juice and gelatine mixture and stir well.
6. Scoop jelly mixture into the orange cups and chill until firm in fridge.
7. When the jelly is set. Cut any shape you like on the orange, it is more easy to craft pattern since the orange become harder after chilled. But still you need to be careful.
