糖烤板栗 Oven Roasted Chestnuts

栗子熱量充足,低脂肪,能強脾胃,壯筋骨,自古便是民間的食補珍品,有「腎之果」之稱。模仿街頭炒栗子的做法,用烤箱把栗子的水分烘乾,讓外殼和緊貼栗子的那一層「膜」更容易剝開,吃起來沒有街頭炒栗子那般上火,安坐家中,就可以享受厚實的澱粉香甜。

材料

  • 栗子 Chestnut 600 g
  • Demerara 原蔗糖 1 大匙
  • 蜂蜜 Honey  2 大匙
  • 油 Oil 2 大匙
  • 清水  1000 ml

做法

1. 買回來的栗子放在陰涼處風乾 1 ~ 2 天

2. 用剪刀在栗子的頂端劃上十字切口,預熱烤箱至 200ºC

3. 煮一鍋滾水,加入原蔗糖及栗子,大火煮沸約 10 分鐘,栗子便會自然爆開

4. 用鋁箔紙將烤盤包好,用毛刷在栗子表面均勻抹油,排在烤盤上

5. 送進烤箱烤 10 分鐘,取出,用毛刷在栗子開口處刷上蜂蜜,多刷幾遍。再烤 5 分鐘,即可享用

小叮嚀

  • 宜選帶殼,底部沒有黑邊的新鮮栗子,放入水中,浮於水面表示變壞。若已去殼,果肉過度潔白或金黃,可能是經過化學處理。連殼栗子買回來後不用清洗,在乾爽通風處可存放數天
  • 栗子膜好不好剝除跟栗子品種有關,較難從外觀判斷,買到好剝的品種要靠點運氣
  • 吃栗子不能過量,否則腸胃蠕動會受阻,引發腸胃脹氣

Roasting chestnuts is simplicity itself, just follow these simple steps to make a delicious snack.

Ingredients 

  • 600 g Chestnut 600 g
  • 1 tbsp Demerara Raw Cane Sugar
  • 2 tbsp Honey
  • 2 tbsp Oil
  • 1000 ml Water

Preparation

1. Place chestnuts in the shade to dry 1 to 2 days

2. Carefully cut an X into the top of each nut with a scissors cutting through the shell. This will allow steam to escape, otherwise the chestnuts can explode ! Preheat the oven to 200ºC.

3. Bring a pot of water to boil, add chestnut and sugar, simmer for 10 mins until shells curl away from nutmeats.

4. Drain chestnuts and pat dry. Spread chestnuts in a single layer in centre of foil on a baking tray. Brush chestnuts with oil, and toss to coat.

5. Roast for 10 mins, take out the chestnuts and brush with honey, bake another 5 mins, depending on size and age of nuts.

    • 皮黏和栗子的品種有關,大顆的栗子要加長煮和烘焙的時間唷

      掃油可保存一些栗子的水份
      有掃油栗子比較香一些
