收養了貓貓後,旅行暫時都不妄想了。暑氣旺毛豆當令,手癢癢的做一道台式涼拌,懷念一下以前的台灣之旅。涼拌毛豆是台灣泡沫紅茶店不能錯過的小菜,日本餐廳也有這道菜,做法簡單,只用鹽水煮過,吃的是清爽。台式做法在調味上下功夫,以鹽、糖、蒜末、八角、胡椒、辣椒等調味,吃的是風味。

台式涼拌毛豆毛豆是主角,鹽是配角。正所謂「 紅花雖美, 還需綠葉配襯」。家裏做不用味精,好品質的海鹽或岩鹽正是涼拌的黃金綠葉,鹹味溫柔而細膩,是提升食材的鮮味的更好選擇。估計一定有讀者問,精鹽 ( 餐桌鹽 ) 不行嗎?不是不行,箇中分別,還是讀者們自己對比一下味道和荷包,自己選擇囉 ~

岩鹽有稱「玫瑰鹽」,是由鹹水湖經由長期蒸發乾涸後堆積固化成鹽礦,把這些鹽礦磨碎後就是岩鹽,礦物質含量豐富,而有不同顏色,可以補充人體的微量元素,而且較少受到污染。海鹽是將海水引入鹽田,經過日曬蒸發結晶而成。除鈉以外,含有微量礦物質,較具營養價值,有海水污染的隱患。精鹽則是將海水經過純化處理後製作而成,為了過濾海鹽中的雜質,使製成品最後只剩下氯化鈉,幾乎不含其它天然礦物質,營養價值是三者之中最低,味道「死鹹」。鹽對人體有一定的負擔,所以肥丁用的很節制,岩鹽價錢雖貴,但吃的少,錢包負擔也不重。

材料

  • 毛豆 Edamame                   500 g
  • 粗海鹽 Coarse Sea Salt      1 大匙
  • 岩鹽 Himalayan Salt           1/2 小匙
  • 原蔗糖 Demerara Cane Sugar     1 小匙  ( 二砂糖都可以)
  • 八角 Star Anise                  1 顆
  • 沸水 Water                         400 ml

調味料

  • 岩鹽 Himalayan Salt      1/2 小匙
  • 麻油 Seasame Oil          1 小匙
  • 現磨黑胡椒粉 Ground Black Pepper     適量
  • 蒜末 Diced Garlic           1 小匙

做法

1. 毛豆放入大盤中,撒粗鹽搓揉約 10 ~ 15 分鐘,把毛豆夾的表面清洗乾淨,還能把豆夾上的細毛搓掉,吃的時候便不會被細毛刺到嘴巴。毛豆夾表面開始出水,沒有毛刺的手感便可以了

2. 用清水把鹽沖去,瀝乾

3. 在平底鍋中放入毛豆夾,平鋪,加入 400 ml 沸水、岩鹽、糖及八角。水量剛好覆蓋毛豆即可。大火把水煮沸後,調至中火,加蓋半蒸煮約 3 分鐘,立即離火

4. 把毛豆放入網篩慢慢降溫,別著急用冰水替毛豆降溫,若立即泡冰水,毛豆會失去甜味和彈性,變水水的不好吃

5. 放涼的毛豆放入大盤裡,加入岩鹽及黑胡椒粉調味,攪拌均勻,放進冰箱冷藏,醃半小時才放麻油較易入味,吃的時候才放蒜末

小叮嚀

  • 提前一個晚上做好,冷藏期間偶爾攪拌一下,第二天吃更入味
  • 調味料可以自己斟酌,有甚麼不吃的,省略就可以了

Edamame are green soybeans. Steamed edamame in the pod are a healthful snack that you can season lots of ways.  In Taiwan they’re commonly seasoned with star anise and minced garlic,salt-boiled in pods are eaten by squeezing beans out of pods with fingers.  It’s a lip-smacking appetizer to serve with beer.

Ingredients

  • 500 g Unshelled Fresh Edamame
  • 1 tbsp Coarse Sea Salt
  • 1/2 tsp Himalayan Salt
  • 1 tsp Demerara Raw Cane Sugar
  • 1 Star Anise
  • 400 ml Water

Seasonings

  • 1/2 tsp Himalayan Salt
  • 1 tsp Seasame Oil
  • Ground Black Pepper
  • 1 tsp Diced Garlic

Preparation

1. In a big mixing bow, sprinkle a pinch of salt and rub vigorously edamame with coarse salt for about 10 mins to remove surface hair.

2. Then rinse off the salt.

3. Place the edamame in a frying pan and add enough boiling water to half cover them ( about 400 ml depends on your size of pan ). Add Himalayan salt, sugar and star anise. Bring it to a boil and turn to medium heat. Cover with lid and simmer for 3 mins. Remove from heat.

4.  Let edamame cool down slowly. Drain edamame in a colander. Don’t cool it in ice water otherwise edamame will lose elasticity.

5. Place cooled edamame in a mixing bowl, add more Himalayan salt and black pepper to taste. Mixe well. Chilled in fridge for about half a hour before adding sesame oil. Add minced garlic when serve.

Tips 

  • Make it overnight taste better
  • If you don’t want too many seasonings, just skip it

  • 煮三分鐘?毛豆仍未熟很硬吧!

    • 要仔細看步驟說明啊,毛豆冷水下,大火水滾後,調至中火,加蓋半蒸煮約 3 分鐘,那是不止 3 分鐘
