秋天要解熱治燥,還要保護腸胃的消化功能,適合吃滋潤的瓜果,及低熱量飽足感強的根莖類蔬菜。豬絞肉拌入富有黏性的山藥泥,嚼勁極好,飽足感強又營養充沛。
山藥深埋土中不易受農藥汙染,藥食皆宜,性質平和,常吃可消除疲勞,提振食慾,健脾益胃,補肺固腎。低脂高纖,含消化酶、10 多種胺基酸及微量元素,有利消化和減重。細幼的山藥質感粉糯,適合熬湯。粗壯的山藥爽脆,可以炒菜。宜挑選表面沒有斑點,無裂痕,鬚根少,有重量的。未切開可用紙包好放在陰暗處。山藥切開後要避免接觸空氣,用保鮮膜包好放進冰箱冷藏。

材料
- 山藥 (新鮮淮山) Chinese Yam 60 g
- 牛絞肉 Minced Beef 150 g
- 豬絞肉 Minced Pork 150 g
- 蛋白 Egg White 20 g
- 麵包粉 Bread Crumb 2 大匙
- 日式赤味噌 Miso 1 大匙 ( 自製日式味噌點這裏 )
- 味醂 Mirin 1 大匙
- 薑泥 Grated Ginger 1/2 小匙
- 九層塔末 Basil 1大匙 ( 香草可自選 )
- 白胡椒粉 Ground White Pepper 適量
做法
1. 山藥用削皮刀去皮,用攪拌棒打成泥或用

2. 用手提攪碎機攪碎牛肉和豬肉,加入山藥泥、蛋白、麵包粉、味噌、味醂、薑泥、九層塔末及白胡椒粉,攪拌均勻,分成 8 份


3. 雙手沾水,用湯匙舀出絞肉,用手搓揉成球狀,然後左手拋右手,右手拋左手,接連拋接,塑成肉餅

4. 用平底鍋中火煎至金黃色,翻面,加蓋,再以小火煎 4 ~ 5 分鐘,煎的時間視乎肉餅的厚薄,關火,盛盤
小叮嚀
- 可以全豬肉或全牛肉製作
- 建議購買整塊鮮肉自行絞打,製作前冷凍至半堅硬的狀態(刀能切得下),才放進手提攪碎機絞碎,可避免肉類水分流失,保持漢堡肉的彈性和嚼勁
- 山藥表皮的植物鹼,有些人接觸後會引起過敏而發癢,處理時最好帶手套。若不慎碰觸導致皮膚紅腫,可用白醋清洗止癢

Chinese yam is commonly cooked in soups (such as lotus root soup) but it can also be stir-fried with vegetables or meat or even making Patties !

Ingredients
- 60 g Chinese Yam
- 150 g Minced Beef
- 150 g Minced Pork
- 20 g Egg White
- 2 tbsp Bread Crumb
- 1 tbsp Homemade Japanese Miso
- 1 tbsp Mirin
- 1/2 tsp Grated Ginger
- 1 tbsp Minced Fresh Basil
- Ground White Pepper
Preparation
1. Peel skin of Chinese yam and grate it with a grater. (Leave top part of skin, then easy to grate and easy to hold it)

2. In a hand blender, minced beef and pork first. Add grated Chinese yam, egg white, bread crumb, miso, mirin, grated ginger, basil and white pepper. Mix all the ingredients together with the hand blender until sticky. Divided into 8 portions


3. Wash your hands and keep both hands wet so the the patties won’t stick to your hands. Toss each portion of the mixture between your hands about 10 times to release the air inside the mixture. This will prevent the patties from breaking while cooking.

4. Heat 2 tsp oil in a frying pan over medium heat and place the patties down gently. Cook the patties for about 3 ~ 4 minutes and do not flip until nicely brown. Flip the patties and cover to cook for another 4 ~5 minutes, or until the meat inside is cooked through. Ready to serve.
Reminders
- You can make whole beef or pork
- I will recommend to minced meat with your own blender because it is not easy to recognised the freshness of minced meat sold at supermarket. The meat is best freeze to half frozen ( could be cut by a knife ) to prevent loosing moisture. The meat combines well together and taste chewy and elastic.
- Some people may cause allergies and itching when they touch the peeled Chinese yam. Wear gloves when handling. If you accidentally touch cause skin irritation, you may clean your skin with white vinegar
